No Knead Bread



When I saw this basic bread recipe at Wit & Delight, I had to try it. Baking scares me, I'm really not very good at it. However this seemed so easy and if it all went wrong I wouldn't be wasting a bunch of expensive food at least! I followed the recipe exactly. The only thing to note is that I baked covered for 30 minutes and uncovered for only 15 before it was brown enough to take out. I am SO (100%) doing this again. You should totally try it if you have a dutch oven (mine is about 7 quarts).

I mixed up all FOUR ingredients in a large Pyrex bowl. It has a cover so it was perfect.

It was very ooey-gooey. That is it for now, then you play the waiting game. I started this at 2pm Sunday and finished it the next afternoon.

Here it is after 18 hours. Bubbles!

Then I folded it over a few times and floured it as the recipe says. It hung out under the plastic wrap for about 20 minutes.

Next I folded it up in a clean flour sack dish cloth for two hours. When two hours were up it looked like this. Smoother and larger.

I dusted the towel with corn meal and plopped the bread on it. I wanted the bottom to have corn meal and the top flour.

But oops! When I tumbled it into the hot dutch oven it ended corn meal side up!

45 minutes later, bread. Corn meal top notwithstanding this is freaking beautiful bread. It felt like magic. Most important part though, it tastes great. Crunchy on the outside and soft on the inside. Bread Nirvana people. I love bread and being able to make high quality french bread at home= Mind. Blown.
