Bourbon Spice French Toast


Did you know that you can cook and bake with bitters? I learned this by following Scrappy’s Bitters instagram account. It makes perfect sense when you think about it, they are strong infusions of flavors, why not add them to cookies or a cake. I added my clove bitters to some french toast and it turned out great!
I usually make french toast with bourbon for it’s flavor so it’s actually not a stretch to reach for the bitters as well. Along with our “cocktail-ish” ingredients, this has vanilla extract, cinnamon and cardamom. There are no special techniques or tools needed and this comes together quickly.


BOURBON SPICE FRENCH TOAST

2-3 slices of bread, cut in half
2 eggs
1 oz bourbon or rye
1/4 tsp vanilla extract
1/4 tsp cinnamon
1/8 tsp cardamom
1 dash clove bitters

1. Heat a nonstick pan over med-low heat.

2. Crack the eggs into a shallow bowl.

3. Whisk in spices, whiskey and vanilla.

4. Cut your bread slices in half, it makes it easier to work with.

5. Using a fork, dip and flip your bread, transferring to a hot pan when coated.


6. Cook 1-2 minutes per side.

Heat a nonstick pan over med-low heat. Bread does matter, the better the bread the better the french toast. But if you have bread you don’t particularly like for sandwiches- might as well use it here!

Crack the eggs into a shallow bowl.

1 ounce whiskey measured.

Spices, whiskey and vanilla added. The batter will be dark and speckly.

Few dashes of clove bitters!

Whisk in spices, whiskey and vanilla.

Cut your bread slices in half, it makes it easier to work with. There is less chance they will tear.

Using a fork, dip and flip your bread, transferring to a hot pan when coated.


Cook 1-2 minutes per side. The white spots are the egg white "boogers". I like my french toast really eggy so I don't mind them. If you don't like the egg white chunks you can strain your batter before dipping the bread.

Serve with real maple syrup and a savory side, like these spicy chorizo sausage patties!
