Herb Roasted Pork Loin with Parsley Shallot Sauce

Oh my goodness this was delicious...
I forgot to take prep pictures because I was in a hurry, then ate it immediately because it was fantastic! One note, mine was overcooked when I used these cooking instructions. I bought a 3 lb boneless pork loin and cooked it at 350°F for 1 hour and 20 minutes. It came to an internal temp of 170°F to 180°F! Way too high. The meat was a little tough and dry but this sauce totally redeemed it!! The loin in the recipe is even smaller than mine, so this temp and length of roasting is much too long.
I Googled around for times for cooking a pork loin at 350°F, ASK had an intriguing answer. I prefer an equation for roasting meat as it allows you to adjust for any weight. At 3 lbs, according to this ASK answer, I should have cooked it for only 1 hour. I'm inclined to try this pork loin again with these adjusted times. I'll follow up with the success or failure when I do!
