Macaroni & Cheese: Study #1

I LOVE macaroni and cheese. Of all varieties. I tried this "Out of This World Crab Mac and Cheese" that I found through Pinterest. It was mid-holiday and I did not feel like leaving the house nor ordering in (un-showered recluse?) I only changed a few things to accommodate what I had/didn't have. Instead of evaporated milk I used about 3-ish ounces heavy whipping cream and the rest 2% milk. I didn't have enough crab (only 6oz canned) so I bulked it out with bacon. Which, I realized in hindsight, totally overpowered my crab meat.

I had three stumps of left over cheddar. I guess I just keep buying it and eating half? It wasn't quite enough. I would add 8oz by weight. I added about half and it was still really good. It would be killer with the right amount. Or even different cheeses. Consider it a second life for a left over party cheese plate!
I would recommend lump crab for this macaroni if you really want the crab to be the main act. I would even add some additional seafood like shrimp to get the seafood flavor to be stronger.
Even my bastardized version was really good though! I would recommend this base recipe and add whatever meat-veggies-etc. that you want!

The wet stuff (eggs, sour cream, milk, mustard & pepper). I left out the salt. I always do, and salt to taste.

First layer of noodles. Starting to top with the cheese-crab-bacon mixture. I used rotini instead of elbows because it's what I had.

Last top layer done.

I added a sprinkling of bread crumbs just because. Would be way better with panko.

All gooey and delicious!
