I found this recipe for Ale and Cheddar soup at ClosetCooking.com. I'm not going to retype it because I followed it exactly! (For once...) I used Bass Ale as the beer.
Ok, I hate to be that guy but this didn't blow me away like I thought it would. Don't get me wrong, it was good and I recommend you try it-it might blow you away! I felt like it just needed something else. Or maybe even had too many things competing for main flavor. Either way, I am really glad I made this and I enjoyed eating it, but I will probably not make it again.
It ended up quite chunky even though I diced everything up reasonably small. After eating a serving I stick blended it into a cream soup. I felt like it would do better that way and I think it did. Another thing is to make sure to really cook the crap out of the veggies in the beginning. Until they are really wilty and soft. I'd do a stock pot and just take your time, getting everything really soft. Then leave the bacon out until after you've stick blended it. Otherwise it gets a little lost.
