Coconut Milk Baked Chicken

I swear, nothing from She Wears Many Hats is ever bad. Some of the best recipes evverrrrr. I love how they are often simple and always real. Real meaning: not crazy diet recipes or use-ten-pounds-of-butter, or this takes 4 hours, just good inventive food that is fun to make and awesome to eat. Gush over.
This Coconut Milk Chicken popped up on my RSS Feed the other day and I tried it almost immediately after haha :) I realized later I probably should have tossed the chicken in the sauce instead of just dumping it over them, no finesse Molly. It would have been good to 'paint' them with more sauce during the bake, buuutttt instead I dumped my saved sauce on the inside of the oven door and sadly watched it instantly burn/evaporate. *sigh* Aside from those personal failings, I found this chicken to be excellent.

I used this brand of coconut milk because it has no guar gum in it. Thus I could use the remainder for soap!

I mixed everything with a fork and it came to about 2/3 of a cup.

I used 6 drumsticks, not seeing a whole chicken cut up as the recipe suggests. Plus drumsticks are so cheap!


Don't just dump it all over them, I feel like I wasted sauce that surrounded the chicken because it just cooked to the pot.

See how the excess sauce just burned to the outside? Whatever though, the chicken was yummy!


I served it with a simple cucumber and cherry tomato salad, tossed with Newman's Own Caesar dressing. I love that stuff.
