I don’t actually like chicken noodle soup. Something about the egg noodles, they take over the whole thing. It ends up spiraling out of control, adding more and more broth as the carefully measured noodles grow and expand. So I made a chicken soup without noodles, and it was AMAZING.

Baked Chicken Fingers
Happy Halloween! (and happy 200th post to me). Let's make some kid food and watch Hocus Pocus! I can't be the only 31-year-old that gets a strong craving for some chicken fingers every once in a while. These are super easy to make, not fried and really satisfy my kid food craving. The proportions listed below are a sort of middle of the road flavor intensity. Feel free to add more spices, less spices, reduce the salt, or change the spices all together!

Coconut Milk Baked Chicken
I swear, nothing from She Wears Many Hats is ever bad. Some of the best recipes evverrrrr. I love how they are often simple and always real. Real meaning: not crazy diet recipes or use-ten-pounds-of-butter, or this takes 4 hours, just good inventive food that is fun to make and awesome to eat. Gush over.
This Coconut Milk Chicken popped up on my RSS Feed the other day and I tried it almost immediately after haha :) I realized later I probably should have tossed the chicken in the sauce instead of just dumping it over them, no finesse Molly. It would have been good to 'paint' them with more sauce during the bake, buuutttt instead I dumped my saved sauce on the inside of the oven door and sadly watched it instantly burn/evaporate. *sigh* Aside from those personal failings, I found this chicken to be excellent.

Buffalo Chicken Enchiladas
Oh wow these are really good!! This recipe is from 'She Wears Many Hats'. I wasn't sure what to expect from these, but how could they be bad? I mean really!
They did not disappoint. I changed a few things, I roasted some green peppers and added them instead of the canned chilies (I wanted to keep the heat down, yeah yeah I like my entrees wimpy mild-medium heat). I think next time I will add some cilantro and bleu cheese into the filling mixture instead of saving it just for garnish. Other than that, I wouldn't change a thing.

Chicken Squares
These Chicken Squares are great if you have left over chicken and want something quick and easy. They would be nice for a warm winter lunch with soup, or a dinner with a side Caesar salad.
I omit the pimentos and use double the chopped green onions.

Honey Soy Chicken
I feel so lazy on week nights when it comes to dinner. This Honey Soy Chicken from "She Wears Many Hats" is really easy and really good. Sometimes it seems when something is easy it is from a packet or lacks flavor. This is super flavorful and from simple ingredients I already had in my kitchen.
The first time I made this I used full chicken legs, skin on and it was soooo good and juicy. The second time I only had a large bone-in breast. It dried out some, but that isn't the recipe- that was my negligent roasting. I would recommend skin on legs or thighs. Breasts tend to dry out in the oven.

Roast Chicken
Perfect roast chicken is a delightful thing. When it works like it should... I find it interesting how many different temperatures and times there are on the internet for roasting a whole chicken. I've sacrificed a fair few chicken (don't worry they all got eaten in the end) to perfecting the roast chicken equation.

Stuffed Chicken Breasts
This is a perennial favorite. The addition of bacon and Gorgonzola cheese makes this chicken a decadent treat.
In theory the idea of rolling a chicken breast up always sounded pretty easy to me. When I first made this recipe it proved to be a pain in the butt. I hemmed and hawed about the filling leaking out and if it would burn or dry up. I was downright angry and had that, "well I'm this far so let's just finish it and if it sucks-whatever".

Chicken Pot Pie
So since it's officially fall the oven is finally back in action. It's just too hot most of the summer in my apartment to use it.
To kick off the fall cooking/baking season I made a chicken pot pie. This is a super easy recipe and many more veggies can be added or substituted than what I have written here. (Also maybe an overhead light for my stove is in order this winter? Ergh... dark pictures)
