Chicken Squares

These Chicken Squares are great if you have left over chicken and want something quick and easy. They would be nice for a warm winter lunch with soup, or a dinner with a side Caesar salad.
I omit the pimentos and use double the chopped green onions.


Chop or shred the chicken finely. Here it is all mixed up. Two cups of chicken is a pretty healthy serving for these. So if you have less don't fret.

Unroll and divide the Crescent rolls into 4 rectangles. Repair the torn pieces and seams by pressing them together.

Put a dollop of (about 1/4 the total) chicken mixture in the center of a rectangle.

Pull the corners in. You can see it doesn't cover all the chicken if you put a good amount in. But this doesn't effect the final outcome what so ever.

I like to bake them on a lightly oil sprayed aluminum foil sheet. They take about 25 minutes and are molten hot inside, so beware! (I burn myself every time because I'm impatient!).
