When I thought of daiquiris I used to think of smoothie-like pink or green frozen treats for underage drinkers. So teeth achingly sweet and frozen, it was never anything that appealed to me. I have since learned that is not a daiquiri. Just like a lemon drop is NOT a martini. A daiquiri is a very simple drink. Light rum, lime and sugar. Almost similar to a margarita, but lacking the orange liqueur. Supposedly a variation of the classic daiquiri (adding some grapefruit and maraschino liqueur) was a favorite drink of Hemingway while in Cuba. I used this daiquiri recipe from Chow.
I hate to give a bad review, but this rum is weird. It's so cute and small batch from Colorado... but I swear it tastes like tequila. I know my palate and sense of smell aren't amazing but I just can't figure this rum out. I keep checking the bottle to reaffirm it is in fact, rum, and not tequila.
I strained my lime juice to get the pulp out. It's not required, but it makes a clearer daiquiri which is pretty! Then shake everything in a shaker until the sugar is incorporated, and serve up.
Pretty! The lime wheel adds some tropical flair. Give this one a try and dream about summer days.
