Ramos Gin Fizz

This is a complicated and, I’ll admit it, slightly bizarre drink. I really enjoy it, but it won’t be for everyone. You have to be ok with raw egg, ok with citrus and milk together and ok with floral notes.
It’s a dividing line.
You can find orange flower water at Middle Eastern/Mediterranean grocery stores or on Amazon. This runs about $3 in store and it will take eons to use.*
You’ll need a really tight shaker for this -or any egg drink- as egg white has a tendency to “pouf” up when shaken and can pop the top of a weaker shaker (this is mine). You’ll get the best rich fluffy top if you dry shake first. That just means shake the whole drink (minus any seltzer water of course!) before adding ice. Then shake again with ice. It’s a chore, but it’s worth it.
Aside from the lovely foam top that doesn’t dissipate like soda or beer foam, egg white has the added benefit of emulsifying the drink. If you use something with different weight ingredients, (fats usually) it will separate. But an egg white will hold it together longer which makes our aesthetic bartender happy. 

RAMOS GIN FIZZ

2 oz Gin
1/2 oz Lemon juice
1/2 oz Lime juice
1/2 oz Half & Half
1/2 oz Simple Syrup
1 Egg white
1 dash Orange flower water
~1 oz Seltzer water


You'll want to use fresh citrus juices for this, as always!

I used a pipette to add the orange flower water (mostly for fun). You can pour a couple drops into the cap then add it to the shaker. 

Egg white only, reserve the egg yolk for another yummy project (hollandaise, meatballs) or feed it to your pets!

You'll want to go slow when you add the seltzer water. Give it a gentle stir to mix the seltzer in and enjoy!


*Seriously, I LOVE this stuff and use it liberally in drinks, but I’ve now had it 1.5 years and there is still about 2” left.
