Frozen Daiquiri


After I made frosé a few times I started to wonder if the same process could be used to make other types of frozen cocktails. If you have ever tried to make a frozen drink by adding ice to liquid and blending, you’ll know what a pain in the ass that is. It takes a ton of ice and ends up more like a normal drink filled with ice pebbles.
By freezing the liquid mixture first then blending with ice you don’t water it down as much. It ends up as an actual slushy and it’s amazing. Since the booze doesn’t really freeze, the mixture is easy to blend. I like pre-crushed or pellet ice for this application. If you have a really good blender, probably any ice is fine. Even my crappy blender can pulverize some pellet ice though!
This recipe is from Serious Eats, “The Best Frozen Daiquiri”. My recipe is for 4 drinks, because if you are going to prep something 24 hours ahead you might as well make a bunch of them.

FROZEN DAIQUIRI

8oz Dark aged rum
3oz fresh squeezed lime juice
3oz Turbinado simple syrup

1. Make a simple syrup (1:1) water and turbinado “raw” sugar.

2. Combine all ingredients in a shallow bowl or baking dish. Don’t use an ice cube tray.

3. Once mixture is frozen, 24 hours later, combine with 3 cups of crushed or pellet ice. Blend until smooth.

4. Store any leftovers in the freezer. Re-blend before serving.
