Instant Pot Sushi Rice


Like everyone with an Instant Pot I love mine! I’m not very good at making rice on the stove top and the instant pot makes it flawlessly with very little attention. I love to use this sushi rice in sushi bowls most of all, but it also works well in sushi rolls and nigiri.
A couple special ingredients are needed for this, rice vinegar and sushi short grain rice. Usually these can be found at the grocery store however! Other than that, it’s just salt, sugar and water.

SUSHI RICE | INSTANT POT

1 cup Short Grain Sushi Rice
1 cup Water
2 tbsp. Rice Vinegar
1 1/2 tbsp. Sugar
1/2 tsp. Salt

1. Rinse rice in lukewarm water until water runs clear, ~3 passes.

2. Drain off all water from the rice. Add to instant pot bowl with 1 cup water. Press the rice button for low pressure at 12 minutes.

3. Once the instant pot is finished, allow the rice to release naturally for 10 minutes. Then quick release any remaining pressure.

4. While the rice is cooking, whisk together salt, sugar and vinegar until combined.

5. When the rice is finished, gently fold in the vinegar mixture until combined. Allow rice to come to room temperature and enjoy!
